Cauliflower has beaten its bad rap as boring! These days, cauliflower crackers, pizza crusts, mash, and gnocchi are widely enjoyed. But cauliflower steak?? Come on!! Yup, cauliflower steak is a thing, and it's packed with fiber, folate, and vitamins C and K!

Cauliflower Steak

  • Preheat your oven to 450 and move the rack to the upper third of the oven.
  • Remove the outer leaves from one head of cauliflower and cut vertically through the core into 4 1" slabs.
  • Arrange the steaks in a single layer on a large, rimmed baking sheet.
  • Brush both sides of the steaks with oil and sprinkle with salt and lemon pepper seasoning, or Tex-Mex rub.
  • Roast the cauliflower until the bottom is golden brown, 18 to 22 minutes. Carefully flip the steaks and continue roasting until tender, 8 to 10 minutes.
  • Remove the steaks from the oven and transfer to a serving platter.
  • Top the lemon-pepper steak with a dollop of whipped sweet butter and let rest for 2 minutes. Sprinkle with chopped parsley and serve with lemon wedges.
  • Garnish the Tex-Mex Steaks with salsa, fresh cilantro, and a squeeze of fresh lime.
